Creme de Menthe Brownies

While I was making a treat for our Girls Craft Night (which was last night - stay tuned for the upcoming post on what we made:), I realized that it would make a perfect blog post because a) it's delicious and b) it's green - how timely is that, with St. Patty's Day next week?! This was all pure coincidence too, I hadn't even thought of that when I decided to make them for the girls. Love it when all the stars align like that, don't you? ;)

The Creme de Menthe Brownie recipe is another one of those family recipes that has been around for generations. It's a great go-to recipe if you need to bring a treat to a potluck, or party (these are a Superbowl favorite!) - the mint and chocolate combo can't be beat. Ok, I guess peanut butter and chocolate could beat it, but this is a great second;). There are a few steps involved, but they're a piece of cake. Or should I say brownie? (Sorry, couldn't resist).

Without further ado (or puns), here's the recipe:

1. Make a pan of brownies and let cool. (This recipe is made for 13x9 pan size, but I made them last night for 7x11 (not realizing I had picked up the small brownie box!), and it's fine, you just get thicker layers. So whatever you want to do!)
2. Mix 2 cups 10x sugar, 2 Tablespoons Creme de Menthe, and 1 stick of softened butter.
3. Spread the mixture over your cooled brownies, and pop in the fridge to harden. This doesn't take long at all - 30 minutes or less.
 4. Melt 6oz of semisweet chocolate chips and 6 Tablespoons of butter. I just put it all in a microwave safe dish, and heat for 30 second intervals, stirring until melted.
5. Let the chocolate cool a few minutes (don't have to wait a long time, just until it's not piping hot). Spread this over the creme de menthe layer, and pop in the fridge to harden.
6. Once it's party time, slice those bad boys up and dig in! They're best served right from the fridge, but they can certainly sit out (they were out all during Craft Night, and the girls and I were still eating them as we wrapped things up).
Oh, and if you have some young Bakers-in-Training hanging around and would like a good 30 minutes to yourself of complete- and I mean, COMPLETE silence, hand over the empty bowl, go grab a magazine, and enjoy some much deserved quiet time! ;)
